My dinner: Paleo Butter Chicken.
I got to share this meal with some pretty special people, and it was a hit! A shout-out to Amy H for sharing this one. Original can be found at dieffs.wordpress.com
2 Large chicken breasts
1 table spoon tomato paste
1 x 400mL can of diced tomatoes
Indian spices (cardamom, curry powder, turmeric, garam masala, ginger) 1 teaspoon of each spice
Chilli flakes to taste
1 Cup water
2-3 cloves of crushed garlic
2 cups of diced vegetables (onion, zucchini, fresh beetroot, spinach, carrot)
Coconut Oil for frying.
Fry off spices, garlic & tomato paste in oil.
Simmer until fragrant
Add veg, water & stir in.
Let simmer over low heat, stir often.
When the veggies are soft put entire contents into a blender.
Brown chicken in a pan, add sauce to simmer.
Stir in coconut cream over low heat
Serve over Cauliflower rice or Cauliflower mash.
Voila! Butter-free paleo Butter Chicken.
